It has been a while since I’ve last posted, but I managed to remember getting some photos of this two-day ordeal. Yes, TWO days! Although a majority of that time is spent inactive, you still have to remember to make time during the couple days to begin each step of this process. It is all worth it, though. Trust! This cookie is my favorite and very fitting for Christmas. It’s essentially almond shortbread layered with apricot preserves and coated with dark chocolate. Thanks to Smitten Kitchen for the recipe.

Ratatouille

Every time I watch the Pixar movie “Ratatouille,” I always want to jump through the screen and eat the delicious-looking French food Remy cooks up. I don’t know about anyone else, but my sister and I always crave cartoon foods for some reason (the pizza in “A Goofy Movie”). After some googling, I found a rendition of ratatouille! I wanted to try it myself after having received my awesome Cuisinart food processor complete with a slicing disc for my birthday. It didn’t turn out picture-perfect, but I feel like I learned enough this first time around to continue perfecting a favorite movie food.

Crock Pot Pork Roast & Creamy Whipped Potatoes

This is going to be one of those posts with barely any pictures. I was so excited to get this thing in the crock pot that I didn’t even think about possibly posting the recipe on here until I had already thrown the thing in. It’s an easy meal to put in a slow cooker and just forget about it the rest of the day until you come home from work with a (very) empty stomach and become engulfed in the wonderful savory smells of roasted pork. This roast was so tender, it took mere seconds to shred and save for leftover pulled pork sandwiches tomorrow. 🙂

Apple Pie Cookies

I’ve been debating writing this post because I’m not done tweaking the recipe to my liking. I saw this post and knew I had to try it myself. The recipe calls for canned apple pie filling and bottled caramel sauce, and since I prefer homemade ingredients to canned/bottled, I tried this recipe by making my own apple filling and caramel. The cookies turned out good, but not perfect. That’s the great thing about baking, you get to learn from your experiences! I will continue tweaking this one until it suits my tastes better. Hummus & Skillet Pita Bread

‘Hummus and pita’ is one of those snacks I like to eat for a light lunch or for when I’m too lazy busy to make something more elaborate. Plus, homemade hummus lasts a good week in the fridge; perfect to accompany pita bread or pita chips for a quick fill-me-up when you need it. I made this chickpea-goodness along with homemade guacamole and salsa last weekend to snack on while Justin and I watched football. I think I’m loving my new food processor.

Mascarpone Mini Cheesecakes

I’ve been making the same cheesecake recipe for years and I wanted to try something different. I was watching Giada last week and was inspired to make a similar mascarpone cheesecake with Nutella sauce. I converted her recipe to make 8 individual-sized cheesecakes. Original recipe is located here. The taste of these are spot on; very light and moist. They failed at keeping their shape and fell after cooling, but I promise you these taste so much better than they look.

Nutella a la Brownies
